Whelks (Buccinum undatum) are carnivorous marine gastropods from the Channel coast found in shallow water. It can also be found under the names whelk, cuckoo, rans, dog winkles or calicos. These large sea snails have a sturdy, coiled, wavy shell. Blond when fished on sandy bottoms, whelk is greener when fished on rocky bottoms. Its muscular feet are very developed and constitute the main part of the edible part. Used yesterday as bait for cod, whelk is today one of the flagship products in fishmongers. Indeed, they are very famous for their delicious blond flesh and for their low calorific intake.

Tasting:

To prepare whelks, you must first wash them in cold water. Then immerse them in boiling water with a bouquet garni and coarse sea salt, to flavor your cooking water. Leave to cook for 10 minutes. Let cool in the cooking water then drain and consume.

The cooking of our whelks, in sea water according to tradition, will fully satisfy you. Accompanied by a sauce (mayonnaise for example) or even a squeeze of lemon or aromatic herbs, whelks will delight your taste buds. As a side dish, as a salad or even au gratin: there is no shortage of whelk recipes and they are all just as delicious!
