The oyster and the sausage, an unexpected combination!

In the South-West of France, the end of the day is to accompany the oyster with a sausage.

It is a culinary tradition of Bordeaux and Charente which consists in tasting a oyster garnished with a squeeze of lemon, a bite of small hot sausage and a sip of dry white wine.

The plate is garnished with fresh shellfish, small hot sausages called crepinette, fine slices of rye bread spread with butter and above all, without forgetting the glass of white wine which adds a spicy effect to the rest of the tasting.
